Freshly-milled flour is made by grinding whole grains into flour shortly before use or sale. It retains more nutrients and flavor as compared to the commercially processed flours often sold in grocery stores.
Grain berries are whole, unprocessed kernels of grains that retain their bran, germ, and endosperm, offering a whole-grain nutritional package. During the milling process, grain berries are turned into flour!

Freshly milled flour contains 40 of the 44 essential nutrients that humans need to survive. It retains more fiber, vitamins, and minerals as compared to commercially-processed flour (and we think it tastes better, too!).
Yes! All of our flours are milled from certified-organic grain berries. This means that the berries were produced according to specific USDA guidelines, ensuring practices like soil health, animal raising, pest control, and use of additives.
No, we do not sift our flours. This ensures that the flours you purchase from us is packed with nutrients! Some bakers may choose to sift the flour, as it removes some of the bran and germ to create a finer, less dense flour that can lead to a softer, more open crumb in baked goods. If you do want to sift the flour, we recommend using a 40 mesh sieve.
While many of our flours do not naturally contain any gluten, they are processed in the same facility that we mill our glutinous flours in. As such, there is risk of cross contamination. We do not recommend purchasing our flours if you are strongly sensitive to gluten.
Our flours do not contain any enrichments and additives. This means that they do have a shorter shelf-life than commercially-produced flours, but it also means that their nutritional value is maintained during the milling process.
